The little things that make a curd a curd
A few general notes on Wisconsin's favorite fried bite. These are educational and rounded - no kitchen is pinned to an exact number.
The squeak
Fresh curds squeak when you bite them. That gentle squeak is the sign of a fresh curd - it fades as the curd ages, so the squeakier, the fresher.
Batter vs breaded
Batter is a wet coating, like the beer batter on stop one, that fries up crisp. Breaded curds get a coating of crumbs or flakes pressed on, like stop five's hand-breaded white cheddar.
Hot oil, fast fry
Curds go into hot oil and come out golden in a few minutes - crisp outside, melty inside. Exact temperatures vary from kitchen to kitchen, so we won't pin one down.
